Pink Ombre Pancakes with Marshmallow Fluff Frosting
The genius mind of Amanda of the beautiful blog, I am Baker has produced this amazing pink ombre creation, complete with marshmallow fluff frosting. Almost too pretty to eat – almost!
To make these beauties, you will need the following:
For the pancakes
3 cups all-purpose flour
3 tablespoons white sugar
3 tsp baking powder
1 1/2 tsp baking soda
3 1/2 cups buttermilk
1/3 cup butter, melted
1 tsp vanilla
Pink gel food coloring
For the marshmallow frosting (the star of the show in our opinion!)
1 cup marshmallow fluff or creme
1 cup mini marshmallows

Chocolate Covered Katie’s 3 ingredient flourless pancakes
If you’re not familiar with Katie and her blog, Chocolate Covered Katie, then get to know because she’s a one stop shop for delicious yet guilt-free dessert recipes. She’s got some great variations of pancakes, our favourite are the flourless ones because they are so simple to make and you won’t need to go to the supermarket – a banana, 1/2 cup oats, and 3 1/2 tbsp of milk, and that’s all you need to make pancakes and you’ve probably got these ingredients in your kitchen.

Banana & Chia Seed Pancakes
Another healthy recipe, this one by Lisa who writes the blog, My Relationship with Food. This pancake recipes is completely paleo friendly, if you are that way inclined, and includes no flour & sugar but incorporates the chia seed, which is filled with twice as much protein as most grains and five times more calcium than milk. Plus, high levels of omega-3 and omega-6 fatty acids, soluble fiber, potassium and antioxidants.
And, they just so happen to be delish! To recreate, you’ll need:
2 large bananas, (mash 3⁄4 of the bananas, keep the 1⁄4 for garnish)
2 large eggs, beaten
1 tsp chia seeds
2-4 tsp coconut oil
2 pinches salt
1⁄2 tsp baking powder
garnish with banana, blueberries, agave nectar and 2 handfuls pecans
